Honey Char Siu Pork
Honey Char Siu Pork is a classic Cantonese barbecue dish featuring tender, red-tinted meat with a sweet flavor profile. This version is marinated with char siu sauce and red yeast rice wine lees, then roasted to a glossy finish.

Step 1
Wash the purchased pork shoulder.
Step 2
Pat dry with kitchen paper towels, then add an appropriate amount of red yeast rice lees, salt, ginger juice, light soy sauce, char siu sauce, oyster sauce, honey, and minced garlic.

Mix well; it is best to massage by hand for a while, and also prick the pork with a bamboo skewer for a while to allow it to absorb the flavors better.

Then place in a fresh-keeping bag and refrigerate for 24 hours.

Remove the marinated pork and place it on a roasting rack, then brush with honey water made from honey and water.

Place in the oven and roast at 200 degrees for 20 minutes first.

Remove, turn over, brush with honey water again, then return to the oven and roast for another 20 minutes.

Once roasting is complete, remove and place in a bowl.

When it is no longer hot to the touch, slice and serve.
