Hot and Sour Celtuce

Shredded asparagus lettuce is salted until tender, then dressed with sizzling Sichuan peppercorn–chili oil and a sweet-and-sour sauce.

Hot and Sour Celtuce

Ingredients

Celtuce (cut lengthwise into thin strips) 500 g
Salt to taste
Rice vinegar to taste
Sugar to taste
Sesame oil to taste
Sichuan peppercorns to taste
Dried chili peppers to taste

Step 1

Cut the celtuce lengthwise into thin strips and arrange them neatly on a plate. Sprinkle with salt and sugar, marinate for 30 minutes, then drain off the released liquid and set aside.

Step 2

Place a wok over medium heat and add the sesame oil. Once hot, add the Sichuan peppercorns and fry until fragrant, then add the dried chili peppers and fry until golden brown. Remove from heat. Arrange the fried dried chilies over the celtuce strips and pour the infused oil evenly over the top.

Step 3

In a separate pan over medium heat, combine appropriate amounts of sugar, salt, and rice vinegar and bring to a boil. Pour the hot sauce around the celtuce strips and serve.
