These vegetarian meatballs mimic the taste and texture of meat without using any animal products. They are delicious boiled in hot pot or stir-fried.

Hot Pot Small Vegetarian Meatballs

Story

Crispy on the outside and tender on the inside, these golden meatballs are packed with the crunch of water chestnuts and the savory flavor of lion's mane mushroom. Whether you drop them into a bubbling hot pot broth or serve them as a snack, they offer a satisfying, meaty bite that is perfect for sharing.

Ingredients

Lion's mane mushroom to taste
Tofu 6 pieces
Water chestnut 11 pieces
Small steamed bun 3 pieces
Flour to taste
Salt to taste
White pepper powder to taste
Light soy sauce to taste
White sugar a little

Instructions

Step 1

Soak the lion's mane mushroom in water, change the water in between, to soak away the yellow water and impurities.

Prepare the ingredients: peel 11 water chestnuts, 3 homemade small steamed buns, 6 pieces of tofu, and lion's mane mushroom soaked until the water is clear.

Mince the water chestnuts and tofu (you can chop them by hand, I am a bit lazy).

Chop the small steamed buns.

Squeeze the lion's mane mushroom dry and chop it.

Combine the chopped lion's mane mushroom, small steamed buns, tofu, and water chestnuts, and add seasonings: salt, an appropriate amount of light soy sauce, a small amount of white pepper powder, and a small amount of white sugar.

The kneaded dough may contain water and be very wet; I added an appropriate amount of flour and kneaded it, then formed it into small balls. (You can form large balls, but that requires a lot of oil for frying; mine is a low-oil version).

Put an appropriate amount of oil in the pot.

Fry over medium-low heat until the meatballs are golden yellow.

Drain the oil from the fried meatballs.

Fry a full basin of vegetarian meatballs. Pack them in plastic bags and store in the freezer.

When eating hot pot, cook until the meatballs float up. (I sprinkled some chili oil to eat).
