Ice Cream Cookies
A fun dessert featuring vanilla ice cream sandwiched between chocolate-coated cookies.

Prepare
Preheat the oven to 175°C and lightly grease two baking trays. Sift the flour and baking powder together.
Make the dough
Cream the butter and vegetable oil with the sugar until pale and fluffy. Add the egg and vanilla extract, then fold in the flour mixture and cereal.
Bake
Roll the dough into small balls, place them on the baking trays spaced 5 cm apart, and gently flatten. Bake for 8 to 10 minutes, then cool on a wire rack.
Coat with chocolate
Once completely cool, brush melted chocolate onto the base of each cookie and chill in the refrigerator for a few minutes.
Assemble
Scoop about 50 g of ice cream onto the chocolate base of each cookie and sandwich with another cookie. Place the ice cream cookies in the freezer to harden, then transfer to an airtight container and freeze. Best eaten within four days.
