Jam Drop Cookies
Simple, easy-to-make small cookies with a jam-filled center, ideal for serving with tea.
Ingredients
Unsalted butter (softened)

caster sugar
150g
egg

plain flour
200g
baking powder
1/2 tsp
jam (any flavour)

Preparation
Preheat the oven to 175°C. Line two baking trays with baking paper.

Make the batter
Cream the butter and sugar together until pale and fluffy. Add the egg and beat well.

Add the flour
Sift the flour and baking powder together and fold into the butter mixture.

Shape and bake
Roll the mixture into small balls and place them on the baking trays at least 5 cm apart. Use your finger to make an indent in each ball and fill with a small amount of jam. Bake for 10 minutes until golden. Add a little more jam while the biscuits are still warm.

Cool and store
Cool on a wire rack. Store in an airtight container for four to five days.
