Layered Birthday Cookie

Ingredients

unsalted butter (cookie dough) 225 g (8 oz)
light brown sugar (cookie dough) 400 g (14 oz)
egg 2
vanilla extract 2 tsp
cake flour 450 g (1 lb)
Dutch-process cocoa powder 6 tbsp
baking soda 1 tsp
unsalted butter (frosting) 115 g (4 oz)
powdered sugar (frosting) 250 g (9 oz)
cream cheese 225 g (8 oz)
melted dark chocolate 115 g (4 oz)
candy (for decoration) 75 g (3 oz)
chocolate chips (for decoration) 75 g (3 oz)

Instructions

Preheat and Prepare

Preheat the oven to 175°C (350°F) and line two 28 cm springform cake pans with parchment paper.

Cream Butter and Sugar

Cream the butter and sugar together until light and fluffy.

Add Eggs

Add the eggs and vanilla extract, mixing until fully incorporated.

Add Dry Ingredients

Sift the flour, cocoa powder, and baking soda over the mixture and fold in until just combined.

Bake the Bases

Divide the dough into two equal portions, press evenly into the prepared pans, and bake for 20 minutes until golden. Cool completely, then transfer to a wire rack.

Make the Frosting

Cream the butter and powdered sugar together, then beat in the cream cheese and melted dark chocolate until smooth and fluffy.

Assemble and Decorate

Spread a generous layer of frosting over the first cooled cookie base, place the second base on top, frost the top and sides, and decorate with candy and chocolate chips.
