Story

This iconic German classic, lebkuchen, is a warmly spiced honey cookie that has been a staple of holiday celebrations for generations, celebrated for its rich, molasses-forward sweetness and fragrant blend of warming spices like cinnamon and cloves.

Ingredients

Eggs 1 piece
Brown sugar (light brown sugar) 150g (5 oz)
Honey 125ml (4 fl oz)
Syrup 125ml (4 fl oz)
Cake flour 450g (1 lb)
Nutmeg powder 1 1/4 tsp
Cinnamon powder 1 1/4 tsp
Clove powder 1/4 tsp
allspice powder 1/4 tsp
powdered sugar (for icing) 190g (6 1/2 oz)
egg white (for icing) 1 tbsp
lemon juice (for icing) 1 tbsp
lemon zest (for icing, finely grated) 1 lemon

Instructions

Preheat Prep

Grease three baking trays.

Mix Wet Ingredients

Beat eggs and sugar until fluffy, then add honey and syrup.

Add Dry Ingredients

Sift the mixed flour and spices, then add to the egg mixture.

Chill

Chill in the refrigerator until firm, for about 2 hours or overnight.

Roll and Cut

Preheat the oven to 160°C, roll the dough to 6mm thick, then cut into three 8×5cm rectangles.

Bake

Bake for 10-12 minutes, then transfer to a cooling rack.

Apply Icing

Mix powdered sugar, egg white, lemon juice and lemon zest, brush onto the cookies, then store after the icing sets.
