Lemon Cookies

Lemon Cookies

Ingredients

unsalted butter (softened to room temperature) 120 g
cake flour 230 g
baking powder 1/2 tsp
egg yolk (beaten) 1
fine granulated sugar 50 g
lemon zest 1
lemon juice 2 tsp
egg white (for brushing the surface) to taste
flour for dusting to taste

Prepare the ingredients

Soften the butter to room temperature. Sift the dry ingredients together and beat the egg.

Make the dough

Using a whisk, cream the butter until pale and fluffy. Add the fine granulated sugar and beat thoroughly, then mix in the beaten egg. Add the lemon zest, lemon juice, and the sifted dry ingredients, and fold everything together with a spatula until fully combined. Gather the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for 1 hour.

Bake

Preheat the oven to 170°C (340°F). Lightly dust the work surface with flour, roll out the dough to about 3 mm thick, and cut out cookies with a cutter. Line a baking sheet with parchment paper, arrange the cookies on it leaving space between each one, and brush the tops with egg white. Bake in the 170°C (340°F) oven for 15–18 minutes.
