Lenguas de gato
Named for their cat's tongue-like shape, these cookies have a light, crisp texture and pair perfectly with desserts or coffee.

Step 1
Preheat the oven to 200°C. Grease two baking sheets with melted butter, then place them in the refrigerator to chill.
Step 2
Beat the powdered sugar and butter with a wooden spoon or food processor. Once the mixture is light and pale in color, add the vanilla extract.
Step 3
Add the egg whites in batches, beating constantly. Try to prevent the mixture from separating; if this happens, you can add a small amount of the flour from the recipe.
Step 4
Sift the flour into the bowl, then fold it into the butter mixture using a stainless steel spoon or plastic spatula. Transfer the batter to a piping bag fitted with a 7mm diameter piping tip, pipe 8cm long tongue-shaped cookies onto the baking sheets, spacing them at least 5cm apart. Bake for 7 to 10 minutes, until the edges are golden and the centers are pale yellow.
Step 5
Use a spatula or fish slice to remove the cookies from the baking sheet while they are still warm. If they are crumbly after cooling, you can put them back in the oven to warm for a short while. Repeat the process until all the batter is used up.
