Step 1

Live shrimp has a delicious flavor, so using live shrimp ensures a better taste. Rinse thoroughly, cut off the rostrums and antennae, then use a toothpick to remove the shrimp vein.

Add cooking wine and shredded ginger to the cleaned shrimp and marinate for 20 minutes to eliminate any fishy odor from the shrimp.

Peel the garlic and mince it into fine pieces. Use the white parts of the scallions, cut them into mince as well. If you do not have young ginger, mince some regular ginger here and set it aside.

Pour oil into a pan. Once the oil is heated, you would normally deep-fry the shrimp, but to reduce oil usage, we pan-fry the shrimp in this step. Use slightly more oil than for regular stir-frying, but far less than for deep-frying. This method is healthier, saves oil, and is very suitable for home preparation.

Use the remaining oil in the pan to stir-fry the minced garlic and chopped scallion whites until fragrant.

Add the young ginger and salt, then stir-fry until the mixture changes color.

Next add breadcrumbs and stir-fry until the breadcrumbs turn golden yellow.

Then add the pan-fried shrimp to the pan and stir-fry quickly so the breadcrumbs coat the shrimp evenly. Turn off the heat, transfer to a plate, and serve.
