Ingredients

plain flour 150 g
butter (cold, diced) 75 g
icing sugar 50 g
egg yolk 1
vanilla extract 1 tsp
softened butter (for decoration) 40 g
icing sugar (for decoration) 75 g
food colouring (blue) as needed
liquorice candies 1 assortment

Instructions

Step 1

Put the flour and butter in a food processor and blend until the mixture resembles breadcrumbs. Add the sugar, egg yolk and vanilla extract and blend until a smooth dough forms. Wrap in cling film and chill for 30 minutes.

Step 2

Preheat the oven to 200°C (gas mark 7). Grease a large baking sheet. Roll out the dough and cut out 7.5 x 4 cm rectangles (re-roll the trimmings to make more). Also cut 2 smaller rectangles measuring 3 x 2 cm and stick them on top of 2 of the large rectangles as the train engine.

Step 3

Transfer the biscuits to the baking sheet and bake for about 10 minutes, until the edges start to turn golden. Leave on the sheet for 2 minutes, then transfer to a wire rack to cool completely.

Step 4

To decorate: put the butter and icing sugar in a bowl and beat with a few drops of colouring. Cut most of the liquorice candies into small dice.

Step 5

Spread a little buttercream on the long sides of the biscuits (except the engine) and press in the liquorice dice. Cut some of the square candies in half and stick them on the engine to represent windows. Stick another piece in front of the engine as the chimney. Add 2 wheels to all the biscuits. Arrange them one after another in the middle of the table.
