Prepare the lotus root
Rinse the lotus root well under running water to remove any grit from the cavities. Peel the skin and cut into rounds about 1/2 inch thick. If desired, you can keep the slices whole or halve them for easier eating.
Prepare the ribs
Place the pork ribs in a large pot and cover with cold water. Bring to a gentle boil over medium-high heat and let cook for 2-3 minutes. Youll see foam rise to the surface. Drain and rinse the ribs to remove the impurities.
Start the simmer
Return the cleaned ribs to a fresh pot with 2 liters of clean water. Add the ginger slices and bring the mixture to a rolling boil. Then reduce the heat to low and let it gently simmer, partially covered, for about 45 minutes.
Add lotus root and finish
Add the sliced lotus root to the pot and continue simmering for another 15-20 minutes, until the lotus root turns a beautiful golden color and becomes tender when pierced with a fork. Season with salt to taste and serve hot.
