A low-fat yogurt made with nonfat milk powder, hot water, and lactic acid bacteria starter, fermented by insulating it in a thermos. Easy to prepare on the go, making it ideal for office workers.
Ingredients
Instructions
Step 1
Pour the hot water into a measuring cup, add the low-fat milk powder, and mix well with a wire whisk.
Step 2
Wait for the milk to cool to 50°C (or cool it over an ice-water bath), add the lactic acid bacteria powder, and mix well with a wire whisk.
Step 3
Pour an appropriate amount of boiling water into the thermos, wait about 10 minutes, then pour out the water (this enhances insulation). Pour the milk into the thermos, cover with the lid, and optionally wrap it in an insulating bag for extra warmth. Let it sit undisturbed until it sets into a smooth tofu-pudding texture (10–12 hours in winter, 6–8 hours in summer).
