Mala Pork Cubes

Ingredients

Lean pork (cut into small cubes) 200 g
Fried peanuts 75 g
Vegetable oil 75 g
Sichuan peppercorns 10
Dried chili peppers 8 g
Chili powder 2 g
Salt 2 g
Cooking wine 25 g
MSG 3 g
Wet starch 20 g
Soy sauce 20 g
Scallions 20 g
Ginger 12 g
Garlic 12 g
Sugar 12 g
Vinegar a pinch

Instructions

Step 1

Cut the pork into finger-sized cubes. Mix with salt, cooking wine, and soy sauce, then coat with wet starch and a little oil. Set aside.

Combine the cooking wine, wet starch, scallions, ginger, garlic, sugar, soy sauce, and MSG into a sauce mixture.

Heat the wok and add oil. Once the oil is hot, add the Sichuan peppercorns and fry until golden, then remove them. Add the dried chilies and fry until dark purple, then add the pork cubes and stir-fry a few times. Add the chili powder. Pour in the prepared sauce and stir a few times once it comes to a boil. Add a splash of vinegar and the fried peanuts, and it is ready to serve.
