Malt Cupcakes

Malt-flavored cupcakes, ideal for a Father's Day parent-and-child baking activity. Pair with marshmallow frosting or chocolate buttercream.

Malt Cupcakes

Ingredients

unsalted butter (room temperature) 110 g
light soft brown sugar 120 g
fine granulated sugar (preferably golden) 100 g
eggs (free-range or organic) 2 large
self-rising flour (sifted) 125 g
all-purpose flour (sifted) 60 g
Ovaltine malt drink powder 50 g
semi-skimmed milk (room temperature) 125 ml
pure vanilla extract 1/2 tsp
sour cream 1 tbsp

Preparation and Preheating

Preheat the oven to 160°C (fan) / 180°C / 350°F / gas mark 4. Line a 12-hole muffin tin with appropriately sized cupcake liners.

Creaming Butter and Sugar

In a large mixing bowl, cream the butter and sugar until pale and smooth using an electric hand mixer, which takes approximately 3–5 minutes. Add the eggs one at a time, mixing for several minutes after each addition.

Mixing Dry and Wet Ingredients

Sift the self-rising flour, all-purpose flour and Ovaltine together in a separate bowl. Mix the semi-skimmed milk, vanilla extract and sour cream together in a measuring jug. Add one third of the flour and Ovaltine mixture to the creamed mixture and stir until just combined. Pour in one third of the milk mixture and stir. Repeat these steps until all of the flour mixture and milk have been added.

Filling and Baking

Carefully spoon the batter into the cupcake liners, filling each about two thirds full. Bake in the preheated oven for approximately 25 minutes, until slightly risen and golden brown. Insert a toothpick into the center of a cupcake to test – it should come out completely clean.

Cooling and Decorating

Remove from the oven and let cool in the muffin tin for approximately 10 minutes, then carefully transfer to a cooling rack. Once fully cooled, decorate with chocolate buttercream or marshmallow frosting (see pages 29 and 69 respectively), and top with whole or crushed Maltesers chocolate, or simply dust with Ovaltine powder. You can spell out "daddy" with sugar letters or write with a piping bag.
