This luxuriously airy filling is crafted by folding a rich, sweetened egg yolk syrup base into premium mascarpone cheese and freshly whipped heavy cream, creating a perfectly smooth and delicate texture for advanced pastries.

Ingredients

Egg yolks 2
Sugar 6 oz (180g)
Water 4 oz (120g)
Glucose or corn syrup 2 oz (60g)
Mascarpone cheese 1 lb (500g)
Heavy cream 1 lb 8 oz (740g)

Instructions

Whip the egg yolks

Whisk the egg yolks until pale.

Make the syrup

Cook the sugar, water, and glucose to 248°F (120°C). Slowly pour into the egg yolks while whipping continuously, and continue to whip until cooled.

Mix the cheese

Beat the mascarpone with a mixer paddle until soft, then fold in the egg yolk mixture.

Finish

Whip the heavy cream to soft peaks, then fold into the mascarpone mixture.
