Glucose or corn syrup

Mascarpone cheese
1 lb (500g)
Heavy cream

Instructions

Whip the egg yolks
Whisk the egg yolks until pale.

Make the syrup
Cook the sugar, water, and glucose to 248°F (120°C). Slowly pour into the egg yolks while whipping continuously, and continue to whip until cooled.

Mix the cheese
Beat the mascarpone with a mixer paddle until soft, then fold in the egg yolk mixture.

Finish
Whip the heavy cream to soft peaks, then fold into the mascarpone mixture.
