Ingredients

bacon strips (diced) 2
ground beef 1 lb
onion (chopped) 1 large
fresh mushrooms (sliced) 1/4 lb
carrot (chopped) 1 large
celery rib (chopped) 1
all-purpose flour 3 tbsp
beef broth 1 cup
Worcestershire sauce 1 tbsp
dried tarragon 1 tsp
pepper 1/4 tsp
hot mashed potatoes 3 cups
shredded cheddar cheese (divided) 3/4 cup
paprika to taste

Instructions

1

Cook the Meat and Vegetables

Fry bacon in a skillet until crispy; drain, reserving 1 tsp of drippings. Set bacon aside. Cook beef in the drippings over medium heat until no longer pink; drain. Coat onion, mushrooms, carrot, and celery with flour; add to the pan along with broth, Worcestershire sauce, tarragon, and pepper. Bring to a boil; reduce to low. Simmer uncovered for 15-20 minutes until the vegetables are tender. Stir in the bacon; transfer to a greased 2-quart baking dish.

2

Bake

Combine the potatoes and 1/2 cup of cheese; spread over the beef mixture. Sprinkle with paprika and the remaining cheese. Bake uncovered at 350°F for 20-25 minutes until heated through. Broil 4 inches from the heat source for 5 minutes until bubbly.
