Story

Creating these charming Matcha Miffy Cookies is a delightful way to enjoy baking with a touch of whimsy. The earthy notes of matcha perfectly complement the buttery dough, resulting in a treat that is as visually appealing as it is delicious. Shaping the little rabbit silhouettes is a joyful process, and a simple dusting of flour ensures the dough releases flawlessly every time.

Ingredients

butter 40g
low-gluten flour 100g
powdered sugar 30g
egg liquid 20g (about half)
matcha powder 1 small spoon
salt 1/4 small spoon

Instructions

1

Step 1

Soften the butter, wait until your finger can press a dent into it, then beat with a whisk until pale white.

2

Step 2

Add powdered sugar and salt, and continue to mix evenly with a whisk.

3

Step 3

Add the egg liquid in two to three portions; mix evenly after each addition before adding the next, and finally beat with a whisk until light and feathery.

4

Step 4

Sift in the cake flour and matcha powder, mix evenly with a spatula to form a dough, but do not knead for too long.

5

Step 5

Wrap the dough in plastic wrap and place it in the refrigerator for about half an hour to an hour.

6

Step 6

Take out the dough, roll it to the desired thickness with a rolling pin, then cut out shapes using a Miffy rabbit cookie cutter. Line a baking sheet with parchment paper and place the cut cookies on the sheet.

7

Step 7

Place the baking sheet on the middle rack of the oven and bake at 180 degrees Celsius for 10 minutes. Just like that, the fragrant little cookies are done.
