These milk-glazed walnuts make an irresistible snack or dessert topping. The soaking step is crucial — it loosens the bitter skin so you get only the sweet, nutty flesh underneath.

Ingredients

walnuts 200g
whole milk 100ml
rock sugar or冰糖 50g
water for soaking

Soak and peel the walnuts

Pour boiling water over the walnuts and let them sit for 5 minutes. Drain, then gently rub off the thin brown skins. Rinse clean and pat completely dry with a kitchen towel.

Coat with milk and sugar

Roughly crush the rock sugar or use rock candy. Toss the drained walnuts with the milk and crushed sugar until evenly coated. Let everything sit for 5 minutes so the flavors meld.

Bake until golden and glazed

Spread the walnuts in a single layer on a parchment-lined baking sheet. Bake at 180°C (350°F) for 20-25 minutes, stirring halfway through, until the milk has evaporated and the nuts are golden and sticky. Cool completely before serving — they'll become crisp as they cool.
