Milk-Scented Broccoli Steamed Cake

Ingredients

broccoli florets 1 cup (about 150g)
large egg 1
milk powder 1 tablespoon
all-purpose flour 1/2 cup (about 65g)
vegetable oil for greasing the bowl

Instructions

Cook the broccoli

Bring a small pot of water to a gentle boil. Add the broccoli florets and cook until tender, about 3-4 minutes. Drain well and let cool slightly.

Blend into a smooth mixture

Transfer the cooked broccoli to a food processor or blender. Crack in the egg and blend until completely smooth, about 2-3 minutes. Add the milk powder and pulse to combine. Transfer to a bowl, then stir in the flour until you have a thick, lump-free batter.

Steam until fluffy

Lightly grease a small steaming bowl or ramekin. Line the bottom with a small piece of parchment paper for easy release. Pour in the batter. Cover loosely with plastic wrap and poke a few tiny holes to let steam escape. Place in a steamer over boiling water and cook for 20 minutes. Let cool for a few minutes before gently turning out onto a plate.
