Millet Porridge
A Zhejiang-style dish that supports kidney health and nourishes the yin, while helping to clear heat and detoxify. Aged millet in particular is known for relieving diarrhea and calming irritability.

Step 1
Pit the red dates, and chop them together with the candied tangerine cake into grain-sized pieces.

Winnow the millet to remove the chaff and any impurities, rinse thoroughly with water, place it in a pot, add the water, bring to a boil over high heat, then reduce to low heat and simmer. When the millet grains begin to bloom, add the red dates, candied tangerine cake, and white sugar, and continue simmering until it thickens into porridge.
