Minced Pork and Chili Mixed Noodles

A few days ago I visited Chongqing, where I ate plenty of spicy dishes during my stay even though not every meal was hotpot. Chongqing’s spicy food doesn’t leave you feeling overheated or irritable—last year I traveled to Chengdu and ate hotpot almost daily, and got such bad diarrhea I almost couldn’t make it back home. Spicy food is truly a love-hate relationship for me. Back in Beijing, suddenly eating only light, mild meals felt off, so I made myself a bowl of screw chili mixed noodles for lunch.

Screw chili is far spicier than regular chili, with a heat level on par with millet chili. Millet chili has a dry, pungent kick, while screw chili has a distinct fresh, fragrant note that makes it perfect for stir-frying with meat for a super appetizing dish.

Since I’m eating alone today, I didn’t want to bother with anything too complicated. I’m from northern China and have loved noodles since childhood, so I boiled a bowl of dragon beard noodles that were ready in just 3 minutes. I had pre-made minced meat on hand so I scooped out a spoonful, chopped up one screw chili and a few garlic cloves, and that’s all it took to make a flavorful, satisfying quick lunch.

This chili mixed noodle dish works just as well for breakfast, with that perfect spicy kick. Enough preamble—here’s the simple, fast recipe: it’s ready to serve in 10 minutes, one big bowl is never enough, it has both meat and vegetable components, is fragrant and spicy, and you can eat it every day without getting tired of it.

Minced Pork and Chili Mixed Noodles

Ingredients

ground pork 50g
spiral chili peppers 1
longxu noodles (fine wheat noodles) 1 small handful
garlic 4 cloves
oil a little
salt 0.5g
soy sauce 30g
oyster sauce 10g

Instructions

1

Step 1

Prepare all main ingredients: ground pork, spiral chili peppers, garlic, and noodles. The Dongling breakfast machine can fry, stir-fry, and boil—very convenient;

2

Step 2

Cut the garlic into small pieces, slice the chili peppers in half lengthwise (keeping the seeds makes them more fragrant), and cut into thick strips;

3

Step 3

Heat a frying pan and add a little oil. When the oil is at about 50% hot, add the ground pork and garlic cloves to the pan and stir-fry until they change color;

4

Step 4

Add the chili peppers to the pan and stir-fry evenly;

5

Step 5

Season with a little salt, soy sauce, and oyster sauce to taste. Since this will be tossed with noodles, make it slightly saltier—use less salt and a bit more soy sauce for mixing with the noodles. Once the peppers are slightly softened, remove from heat and set aside;

6

Step 6

Switch the Dongling breakfast machine to the small boiling pot, add hot water and bring to a boil. Add the longxu noodles and cook for about 3 minutes until the noodles are soft with no white core, then remove;

7

Step 7

Rinse the noodles with cold water twice to prevent sticking. Pour all the minced pork and chili mixture over the noodles and mix well before eating. This flavorful quick chili mixed noodles dish is done—one big bowl fills you up, so satisfying!
