Mint Chocolate Baked Chilled Cheesecake

Mint Chocolate Baked Chilled Cheesecake

Ingredients

Cream Cheese 150 g
Plain Yogurt 70 g
Heavy Cream 60 ml
Egg White 1
Powdered Sugar 3 tbsp
Chocolate Chips 2 tbsp
Crème de Menthe 2 tsp
Lemon Juice 1 tsp
Oreo Cookies (filling removed) 60 g
Unsalted Butter 30 g

Make the Crust

Place the Oreo cookies in a ziplock bag and crush them finely with a rolling pin. Add the melted butter and mix until evenly combined, then pour into the mold and press down firmly to form an even layer.

Make the Batter

Put the cream cheese in a mixing bowl and slowly beat with a whisk until smooth. Add the ingredients in the following order: powdered sugar → egg white → yogurt → heavy cream → crème de menthe and lemon juice, mixing thoroughly after each addition. Strain through a sieve, then add the chocolate chips and give it a brief stir.

Bake and Chill

Place the mold inside a square baking pan, pour the batter into the mold, and pour hot water into the baking pan to a depth of about 1 cm. Bake in the oven at 200°C for 10 minutes; open the oven door for about 3 minutes to let the temperature drop to 110°C, then continue baking for another 30 minutes. Once cooled, place the entire mold in the refrigerator to chill for 3–4 hours. Finish by sprinkling chocolate chips on top as decoration.
