Moya Stir-Fried Beef Slices
Created by Zhang Daqian in Taipei, this dish features beef slices rinsed to wash away the blood water, then flash-stir-fried over high heat until the meat turns white and crystal-bright.
Ingredients
tenderloin beef (cut into thin slices)
to taste
cornstarch (mixed with water)
a pinch
wood ear mushroom (rehydrated)
to taste
Instructions

Wash the meat
Slice the beef tenderloin into thin pieces and rinse under running tap water through a strainer for twenty minutes.

Coat the beef
Add a small amount of cornstarch slurry and mix evenly.

Stir-fry over high heat
Heat oil over high heat, add the beef slices and the rehydrated wood ear mushrooms to the pan at the same time, and quickly stir-fry until just cooked.
