Mung Bean and Cranberry Pastry
There used to be a shop selling green bean pastries right near my home, but it moved away and I’ve been craving that fragrant, crispy green bean pastry ever since! Today I’m sharing this recipe for Red Bean Paste Cranberry Shortbread: it has a crisp, flaky exterior and a soft, tender interior, and it’s so delicious you won’t be able to stop eating it.
Ingredients
Instructions
Step 1
Mix flour with lard to form a shortcrust pastry dough.
Step 2
Cover the dough with plastic wrap and let it rest for 20 minutes.
Step 3
Mix flour, water, and lard to form a water dough, cover with plastic wrap, and let it rest for 20 minutes.
Step 4
Mix the mung bean paste with cranberries and powdered sugar evenly. The mung bean paste is leftover from making mung bean cakes, so the most time-consuming step (soaking peeled mung beans, steaming, mashing into puree, and sieving) is skipped.
Step 5
Shape the filling into portions of about 25 grams each.
Step 6
Take appropriate amounts of the shortcrust dough and the water dough, roll into strips, and cut into pieces.
Step 7
Wrap the shortcrust dough inside the water dough, each portion about 30 grams.
Step 8
Roll out and roll up from one side.
Step 9
Cover with plastic wrap and let it rest for 20 minutes.
Step 10
Roll out again, roll up, and let it rest for 20 minutes.
Step 11
Fold in half from the middle and roll out.
Step 12
Place the filling inside, slowly close the opening using the tiger's mouth technique, and flatten.
Step 13
Arrange them on a baking tray and place in a preheated oven.
Step 14
Bake at 190°C (top and bottom heat) for 20 minutes. Brush with egg wash and sprinkle black sesame seeds in the middle for decoration.
Step 15
The crispy and fragrant bean paste pastry is perfectly done.
Step 16
Just out of the oven and can't wait to take a bite 😁 It tastes even better after the oil has settled in.
