Ingredients

Milk Chocolate (chopped) 130 g
Sweet Chocolate (chopped) 30 g
Heavy Cream 85 ml
Honey 1 tbsp
Unsalted Butter 5 g
Cocoa Powder to taste

Instructions

1

Advance Preparation

Finely chop both chocolates, place them in a bowl, and mix them together. Line a square mold with baking paper.

2

Mix Cream and Honey

Place ingredient A in a small saucepan, turn on the heat, and just before it reaches a boil, take it off the heat. Pour it over the chocolate in the bowl and mix until evenly combined.

3

Add Butter

Add the butter and fold it in gently with a silicone spatula until evenly combined. Cover with a lid and let sit for about 1 minute so the residual heat melts the chocolate.

4

Whisk Gently

Whisk gently with a whisk, taking care not to introduce any air. If the chocolate hasn't fully melted, set it over a pot of hot water to melt it completely.

5

Pour into the Square Mold

Pour the mixture from step 3 into the prepared square mold. Use a bamboo skewer to pop surface bubbles and smooth out the surface. Place in the refrigerator to chill until set.

6

Remove from Mold and Cut

Once the mixture from step 4 has set, remove it from the mold and peel off the baking paper. Cut into your preferred size using a knife or chef's knife that has been dipped in hot water.

7

Coat with Cocoa Powder

Place the pieces from step 5 into an enamel dish filled with cocoa powder and toss to coat them completely. Then sift the remaining cocoa powder over the top using a tea strainer.
