Nanchang Fried Rice

Overnight leftover rice can easily become hard and clump together. A helpful cooking trick is to briefly heat it in the microwave before tossing it into the wok. This simple step loosens the grains and makes it much easier to achieve the perfect texture when stir-frying.

Dice the green peppers, crab sticks, and shiitake mushrooms. Mince the scallions and set aside.
Step 2
Heat the leftover rice in the microwave first; this reduces the stir-frying time.
Step 3
Heat oil in a wok, pour in the beaten eggs, quickly scramble them, and dish out to set aside.
Step 4
Heat oil in the wok again, pour in the diced green peppers, crab sticks, and shiitake mushrooms, and stir-fry. Add a little chili powder and stir until fragrant.
Step 5
Pour in the rice and stir-fry. Add salt and chicken bouillon, and stir well to combine.
Step 6
Add the minced scallions and stir-fry evenly until well combined.
