Ingredients

flour 500 g
donkey meat filling 250 g
chives 300 g
soy sauce 15 g
cooking wine 10 g
refined salt 4 g
MSG 2 g
minced ginger 5 g
sesame oil 30 g
chicken broth 100 g
peanut oil 25 g

Step 1

Mix the flour with boiling water to form a scalded dough.

Add the soy sauce, cooking wine, chicken broth, refined salt, MSG, minced ginger, and 20 g of sesame oil to the meat filling and mix well, then add the chopped chives and stir until evenly combined.

Knead the dough until smooth, roll it into a long strip, tear off pieces each weighing about 13 g, flatten them, and roll into round wrappers. Wrap each piece with filling, fold the wrapper in half, pinch the middle firmly closed while leaving an opening at each of the two corners (do not seal), then set aside flat.

Heat a flat pan and brush it with a layer of oil. Arrange the pot stickers in the pan, drizzle in a little peanut oil and cold water, cover, and steam-fry. After 6-7 minutes when the water has evaporated, uncover, drizzle a little sesame oil, cover again and steam-fry for a little while longer. Uncover, and use a spatula to scoop the pot stickers out onto a plate.

Tip: The dough should be moderately soft and firm. Add the chopped chives just before wrapping to prevent them from releasing water.
