Oatmeal Chocolate Chip Cookies (Low-Fat)

Ingredients

all-purpose flour 1¼cup
baking soda ¾tsp
baking powder ¾tsp
salt ¼tsp
corn oil or canola oil ¼cup
unsalted butter, softened 2 tbsp
dark brown sugar, packed 1 cup
large egg 1
large egg white 1
light or dark corn syrup ⅓cup
skim milk 1 tbsp
vanilla extract 2½tsp
old-fashioned rolled oats 2 cup
low-fat semisweet chocolate chips 1 cup

Instructions

1

Preheat and Prepare

Position the rack in the center of the oven. Preheat the oven to 375°F. Spray baking sheets with nonstick spray. Whisk the flour, baking soda, baking powder, and salt together in a bowl until thoroughly combined.

2

Mix the Wet Ingredients

Using medium speed, beat the oil, softened butter, and brown sugar until fully combined. Add the egg, egg white, corn syrup, milk, and vanilla extract and beat until smooth.

3

Add the Oats

Stir the oats into the batter. Let the mixture rest for 10 minutes to allow the oats to absorb some of the moisture.

4

Combine the Dough

Stir in the flour mixture; the dough will be slightly soft. Drop the dough by measuring spoonfuls onto the prepared baking sheets, spacing them about 2½ inches apart.

5

Bake

Bake for about 7 to 10 minutes, until the cookies are lightly browned all over and just set when pressed gently in the center. Be careful not to overbake.

6

Cool

Move the baking sheets to a wire rack and let sit for about 2 minutes. Transfer the cookies to the wire rack to cool completely.
