Oil-Drizzled Garlic Queen of the Night
This preparation also works well with dragon fruit flower and hibiscus blossoms. The spoonful of fragrant vinegar is the finishing touch—it cuts through the richness while whetting the appetite.

Step 1
Picked 6 blooms of queen of the night that bloomed last night from the balcony, and rinsed off dust with light salt water.
Step 2
Remove and discard the stamen inside the blooms.
Step 3
Tear the petals into small strips and set aside. I added a few hibiscus blooms after removing their stamens.
Step 4
Add a small amount of salt to boiling water in a pot, add the torn queen of the night, boil for 2 minutes, then remove and set aside.
Step 5
Place the drained queen of the night on a plate.
Step 6
Drizzle with 0.5 teaspoon of light soy sauce, 1 teaspoon of aromatic vinegar, and 1 teaspoon of steamed fish soy sauce.
Step 7
Top with the minced garlic.
Step 8
Heat cooking oil in a pot until hot, then pour it over the minced garlic to bring out its aroma.
Step 9
Adjust the amount of light soy sauce according to your preferred saltiness.

Mix well and serve. The queen of the night is smooth, refreshing, crispy and tender, full of gelatinous texture. With the addition of aromatic vinegar and minced garlic, it is non-greasy and appetizing.
