Prepare dry ingredients
Sift together the flour, baking powder, and salt into a large mixing bowl. Set aside.
Mix wet base
In another bowl, whisk together the milk, egg, sugar, and salt until the sugar dissolves and the mixture is smooth.
Add mango
Stir the mango puree into the milk mixture until everything is well combined and smooth.
Combine and fold
Pour the wet ingredients into the bowl with the flour mixture. Fold gently until just combined—stop as soon as no dry flour remains. A few small lumps are fine.
Portion and top
Divide the batter evenly among 6 lined cupcake cups, filling each about two-thirds full. Scatter a few fresh mango cubes on top of each.
Bake
Preheat oven to 180°C (350°F). Bake for 22-25 minutes until the tops are lightly golden and a toothpick inserted in the center comes out clean.
Cool and serve
Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
