Orange-Flavored Cheese Mousse

Ingredients

egg whites 4 ounces (125g)
sugar (for syrup) 4 ounces (125g)
water (for syrup) 2.5 ounces (70g)
gelatin 0.33 ounces (9g)
orange zest (grated) 1.75 teaspoons (4g)
orange liqueur 1.33 ounces (40g)
cream cheese 8 ounces (250g)
orange juice (strained) 2 ounces (60g)
heavy cream 11 ounces (350g)

Instructions

Step 1

Make the meringue: Whip the egg whites until soft peaks form. Boil the sugar and water into a syrup, heating to 240°F (115°C). Gradually add the hot syrup to the egg whites and continue whipping until cooled. Set aside.

Soften the gelatin in cold water.

Heat the orange liqueur, add the gelatin, and stir until dissolved.

Using the paddle attachment of a stand mixer, blend the cream cheese with the orange zest and a small amount of orange juice until smooth.

Add the gelatin mixture and the remaining orange juice, and stir until smooth.

Whip the heavy cream until soft peaks form. Fold the meringue and whipped cream into the cheese mixture in alternating additions until smooth.

Pour into molds and refrigerate.
