Orange-Glazed Radish Strips
Tender radish strips bathed in a sweet citrus glaze make for a refreshing cold appetizer. The radish becomes translucent and silky after a quick blanch, then absorbs the bright orange flavor as it marinates.
Story
This simple dish transforms humble radish into something special. The brief cooking time keeps the radish crisp-tender while the orange juice adds a lovely sweetness. Serve chilled as a palate cleanser between rich dishes or as a light start to a meal.

Instructions
Prepare the radish
Peel the radish and cut into finger-sized strips, about 1cm thick. Aim for uniform pieces so they cook evenly.
Blanch the strips
Bring a pot of water to a gentle boil. Add the radish strips and cook for 5-7 minutes until they turn translucent and can be easily pierced with a fork. Don't overcook—they should retain a slight bite.
Make the orange glaze
While the radish drains, pour the orange juice into a small saucepan. Add the sugar and a pinch of salt. Warm over medium heat, stirring occasionally, just until the sugar dissolves completely. Don't let it boil.
Combine and marinate
Transfer the warm radish strips to a shallow dish. Pour the orange glaze evenly over the top. Let the dish cool to room temperature, then cover and refrigerate for at least 2 hours before serving to let the flavors meld.
