Pork ribs (cut into sections, cleaned) 500 g
Onion (peeled, trimmed, cleaned, chopped) 1
Tomatoes (cleaned, trimmed, chopped) 2
Lemon juice 15 ml
Soy sauce 15 ml
Brown sugar 30 g
Tomato sauce 30 ml
Curry powder 5 g
Cool boiled water 250 ml

Instructions

1

Ingredient Preparation

Pork ribs cut into sections and cleaned; onion peeled, trimmed, cleaned and chopped; tomatoes cleaned, trimmed and chopped

2

Blanch Pork Ribs

Place the pork ribs in a stockpot, add enough water to fully submerge them, bring to a rolling boil over high heat, reduce to low heat and blanch for 2 to 3 minutes. Remove the ribs and drain excess water.

3

Make Sauce and Marinate

Add the chopped onion, chopped tomatoes, brown sugar, soy sauce, tomato sauce, curry powder, lemon juice and 250ml cool boiled water to a blender, blend into a smooth sauce, then pour into a bowl. Add the blanched pork ribs, stir to coat evenly, and marinate for 8 to 12 hours. Prepare a baking tray, arrange the marinated pork ribs on the tray, and pour the marinade over the ribs.

4

Roast

Preheat the oven to 150°C, place the baking tray with pork ribs in the oven, and roast for 40 to 50 minutes using upper and lower heating elements. Remove and serve on a plate.
