Oyster Mushroom and Pork Dumplings
"The dumpling wrappers are smooth, tender, and beautifully colored. The filling is savory and fresh with plenty of juice."
Ingredients
Instructions
Step 1
An appropriate amount of front leg pork.
Step 2
Cut into small pieces and place in a meat grinder.
Step 3
Grind into meat filling.
Step 4
Cut the scallions into small pieces.
Step 5
Mince the ginger.
Step 6
Add the scallions and ginger to the meat filling.
Step 7
Season with salt, light soy sauce, dark soy sauce, oyster sauce, sesame oil, and Sichuan peppercorn powder to taste.
Step 8
Stir in one direction until the mixture becomes sticky and cohesive.
Step 9
Rinse the oyster mushrooms, squeeze out excess water, and chop into small pieces.
Step 10
Heat an appropriate amount of oil in a pan and sauté the scallions until fragrant.
Step 11
Add the chopped oyster mushrooms to the pan along with a little light soy sauce and dark soy sauce to adjust the color.
Step 12
Stir evenly and let cool. The mushrooms will still release a bit of water during stir-frying, but that's fine — the meat filling will absorb it, keeping the mixture juicy without clumping.
Step 13
Pour the cooled mushrooms into the filling.
Step 14
Mix well. (It was getting dark by then, so the color of the meat filling didn't come out very pretty.)
Step 15
Place the steamed and cooled carrot slices into a blender.
Step 16
Blend into a thick carrot puree. Dough made this way has a lovely orange-red color.
Step 17
Pour the carrot puree over the flour.
Step 18
Stir with chopsticks until it forms a shaggy, flaky texture.
Step 19
Knead into a soft, medium-firm dough and let it rest for 10 to 20 minutes.
Step 20
Use a pasta machine to roll the dough into thin sheets, then use a dumpling mold to cut out wrappers.
Step 21
Take a wrapper and spread an appropriate amount of filling on it.
Step 22
Fold into your favorite dumpling shape.
Step 23
Bring a pot of water to a boil and add the dumplings.
Step 24
Boil for three rounds, then remove.
