Oyster Sauce Beef
Cantonese-style oyster sauce beef: tender, velvety beef slices with a rich, savory oyster sauce flavor.

Beef shank (cut into thin willow-leaf slices, coated with starch slurry)

Baking soda (for marinating)

Shaoxing wine (for marinating and cooking)

Light soy sauce (for marinating)
a pinch
Peanut oil (for marinating)
to taste
Oyster sauce (for making sauce)
to taste
MSG (for making sauce)
to taste

Ground white pepper (for making sauce)

Starch slurry (for making sauce)
to taste
Stock (for making sauce)

Scallion (for stir-frying until fragrant)

Step ①
Cut the cleaned beef shank into thin willow-leaf slices, mix with baking soda, Shaoxing wine, egg, sugar, starch, water and a little light soy sauce to coat with starch slurry, add some peanut oil and mix well, set aside. Mix oyster sauce, MSG, soy sauce, ground white pepper, starch slurry and stock to make the sauce

Sprinkle the marinated beef slices into oil heated to low-medium heat, cook until done, pour out and drain excess oil. Add scallion and ginger to the pan and stir-fry until fragrant, add the beef slices, pour in Shaoxing wine, thicken with the prepared sauce, stir-fry a few times over high heat, then serve immediately
