Story

These bacon-wrapped asparagus rolls make an excellent appetizer for any gathering. The key is to blanch the asparagus briefly so it stays bright green and crisp-tender, then wrap it tightly in bacon before pan-frying.

Ingredients

asparagus 1 bunch (about 12 spears)
bacon strips 6 strips
salt 1/2 teaspoon
olive oil 1 tablespoon
black pepper to taste

Prepare the asparagus

Trim off the woody bottom ends of the asparagus. Using a vegetable peeler, lightly scrape the outer skin of the bottom third of each spear. Cut each spear into thirds for easier rolling.

Blanch the asparagus

Bring a pot of water to boil. Add salt, then drop the asparagus pieces in for 20 seconds. Quickly remove and plunge into ice water or cold running water to stop the cooking. This preserves the vibrant green color and keeps them crisp.

Wrap with bacon

Lay a strip of bacon flat. Place 2-3 pieces of asparagus at one end and roll tightly, securing with the bacon seam-side down. Repeat with remaining asparagus.

Pan-fry until crispy

Heat olive oil in a skillet over medium heat. Place the bacon-wrapped rolls seam-side down and cook for 3-4 minutes per side, turning carefully, until the bacon is golden brown and crispy throughout.

Serve

Transfer to a paper towel-lined plate to drain excess grease. Season with freshly ground black pepper and serve warm.
