Prepare the worms
Select mature maple worms that have already descended from the tree. These older worms are naturally clean inside. Sort through them to remove any debris or damaged specimens. No washing is needed since they're eaten whole.
Heat the pan
Pour the oil into a cold wok or frying pan. Set heat to low and allow the oil to warm gradually. You'll know it's ready when the oil shimmers slightly.
Fry until golden
Add the maple worms to the warm oil in a single layer. Let them cook slowly, turning occasionally, for about 8-10 minutes until they turn golden brown and become crispy on the outside. Season with salt during the last minute of cooking.
