Pea and Meat Sauce Rice Noodles

Ingredients

peas 1 jin (500g)
dry rice noodles Half jin, serves 3-4
ground pork Half jin (250g)
vegetables to taste
scallions 2 stalks
ginger 1 small piece
garlic 2 cloves

Instructions

1

Step 1

Rinse the dried white peas.

2

Step 2

Soak overnight.

3

Step 3

Drain the peas.

4

Step 4

Heat the pressure cooker until dry, add an appropriate amount of peanut oil, and toss in the ginger slices to briefly fry.

5

Step 5

Pour in the peas and stir-fry briefly.

6

Step 6

Add an appropriate amount of water (about 1.5 cm above the peas), and season with salt and chicken bouillon to taste.

7

Step 7

Cover with the lid. Once it comes up to pressure on high heat, reduce to medium heat and cook for 15 minutes. Turn off the heat and let it cool naturally until the valve drops.

8

Step 8

The cooked peas.

9

Step 9

Bring a pot of water to a boil, add the 1.2mm dry rice noodles, and soak for about 20-25 minutes until they snap easily when lifted with chopsticks. You can also boil two eggs at the same time. Once the noodles are soaked, rinse with water until clear, then drain and set aside.

10

Step 10

The meat sauce can be prepared in advance. The method is simple: add oil to a pan, stir-fry the ground pork until it turns white and releases oil, add a large spoonful of sauce (wheat paste, flour paste, or soybean paste all work), stir-fry over medium heat until it releases oil, add a pinch of salt to season, and it's done.

11

Step 11

Add water to a pot, add an appropriate amount of meat sauce, and simmer to make the broth base. If you have stock on hand, you can skip making the broth base and use the stock directly.

12

Step 12

Simmer until the broth is thick and flavorful.

13

Step 13

Add seasonings to the bowl: salt, minced garlic, chili oil, Sichuan pepper oil, Sichuan pepper powder, and MSG.

14

Step 14

Bring a pot of water to a boil and blanch the vegetables first. Any leafy greens will work.

15

Step 15

Transfer to the bowl.

16

Step 16

Take an appropriate amount of rice noodles and blanch briefly.

17

Step 17

Place into the bowl. Then top with the peas and meat sauce. Sprinkle with chopped scallions if available.

18

Step 18

Mix well and enjoy — it tastes fantastic :)
