Ingredients

Butter (softened) 1 cup
Sugar 1 cup
Brown sugar 1/2 cup
Eggs (room temperature) 2
Peanut butter 1-1/2 cup
All-purpose flour 1-3/4 cup
Vanilla extract 1 tsp
Salt 1 tsp
Baking soda 1 tsp
Cream cheese (room temperature) 1 package (8 oz)
Butter (softened) 1/4 cup
Peanut butter 1 cup
Vanilla extract 1 tsp
Powdered sugar 1 box (16 oz)
Salt 1/2 tsp
Mini peanut butter cups (for garnish) to taste

Instructions

Make the Cookies

In a large mixing bowl, cream the butter and sugar until well combined. Add the eggs and peanut butter and continue beating until mixed. Add the flour, vanilla, salt, and baking soda. Beat until combined. Cover the bowl and refrigerate for at least 1 hour. Remove and spread into a greased jelly roll pan. Bake at 375°F for 15 minutes. Once cooled, cut out circles using the open end of a push-pop mold.

Make the Peanut Butter Frosting

Combine the cream cheese, butter, and peanut butter, beating until smooth. Add the vanilla, powdered sugar, and salt, and continue beating for about 2 to 3 minutes until fluffy. Transfer the frosting to a large zip-top bag and snip off one corner.

Assembly

Place a peanut butter cookie round at the bottom of the push-pop mold. Pipe a layer of frosting over the cookie. Repeat the layers until the mold is filled, finishing with a swirl of frosting on top. Halve the mini peanut butter cups and place them on top as garnish.
