Pierre (Saint Pierre Cake)
A traditional French cake made by kneading the dough with fingertips, with a crisp texture and rich buttery flavor.
Ingredients
flour
250 g
granulated sugar
150 g
softened salted butter, cut into small cubes
180 g + 10 g (for greasing mold)
egg yolks
5 + 1 (for brushing surface)
baking powder
half a bag
salt (add if using unsalted butter)
a pinch
Instructions
1
Mix dry ingredients
Mix the flour and baking powder together, pile into a volcano shape on a work surface or in a large bowl.
2
Create sandy texture
Add the egg yolks, sugar, and salt to the center. Knead with fingertips until a sandy texture forms. Add the cubed butter, and mix again.
3
Shape and bake
Lightly grease the mold with butter, then fill with the dough. Brush the surface with beaten egg yolk. Score diamond patterns on the surface with a fork. Bake in the oven for about 25 minutes. Remove from the mold while warm, and cool on a cake rack.
