water 1 tbsp
dark soy sauce 1 tbsp
Shaoxing wine 1 tbsp
chicken stock or water 1/2 cup
cornstarch 1 tsp
oil to taste
minced garlic to taste
sweet bean sauce to taste
sugar to taste
sesame oil to taste
chopped scallions to taste

Instructions

1

Preparation

Place the dry noodles in a 4-liter deep flat-bottomed pot, add 6 cups of boiling water, and cover. Heat on high for 4 minutes until the water comes to a boil. Loosen the noodles, stir well, then cover again and heat on high for another 4 minutes. Remove and let stand for 4 minutes, then pour into a colander, rinse thoroughly with cold water, drain, and set aside.

2

Preparation

Mix the pork with the seasoning. Stir together the cornstarch slurry ingredients until well combined.

3

Method

Add oil and minced garlic to a 2-liter deep pot and heat on high for 2 minutes. Add the sweet bean sauce and sugar and heat on high for 30 seconds. Add the minced pork and stir together with the sauce mixture, heating on high for 30 seconds. Break up the meat and heat on high for 1 minute 30 seconds.

4

Method

Stir the slurry and pour it into the pot, continuously stirring so it combines evenly with the pork. Heat on high for 1 minute, stir again, and heat on high for another minute.

5

Method

Arrange the noodles in a deep plate, wrap tightly with plastic wrap, and heat on high for 3 minutes. Pour the sauce mixture over the noodles, add the sesame oil and chopped scallions, and stir well before serving.
