Preserved Egg Tofu

Story

This classic Chinese cold dish showcases a pleasing contrast of textures—velvety silken tofu against the dense, custardy preserved egg. The simple dressing of soy sauce, a touch of sugar, and fragrant sesame oil ties the mild flavors together, while fresh scallions add a bright finish. Perfect for a light start to a meal or as a cooling side on a warm day.
