Pumpkin Knife-Cut Steamed Buns
A Chinese recipe for Pumpkin Knife-Cut Steamed Buns made with all-purpose flour, pumpkin puree, yeast, sugar, and lard.

Step 1
Peel the pumpkin, remove the seeds and pulp, then cut into thin slices.
Step 2
Place the pumpkin slices in a steamer and steam for 20 minutes.
Step 3
Mash the steamed pumpkin into a puree.
Step 4
Prepare the all-purpose flour.
Step 5
Add the pumpkin puree, yeast, and sugar to the flour.
Step 6
Stir until it forms flaky dough clumps.
Step 7
Knead into a smooth dough, adding 10g of lard halfway through and continuing to knead until smooth. Cover with plastic wrap and let ferment in a warm place until doubled in size.

The fermented dough (poke a hole in the center; if it doesn't retract and the dough has a honeycomb texture, it's ready).
Step 9
Take out the dough, degas it, and knead it smooth again.
Step 10
Roll it out into a large thin sheet.

Roll it up tightly into a long log shape.

Cut into uniform pieces 4cm wide.

Place the cut pieces into a steamer, add cold water, and leave the heat off. Cover with the lid and let rest for another 20 minutes. Once the resting time is up, turn the heat to high until the water comes to a boil. After steam starts to release, reduce the heat to medium-low and steam for 15 minutes. Turn off the heat and let it sit for 3-5 minutes, then it's ready.
