Set unsalted butter aside to soften at room temperature; preheat oven to 170°C; line a baking sheet with parchment paper.

Place butter in a mixing bowl, beat with an electric hand mixer until it turns pale and forms a creamy paste. Add refined white sugar and stir gently, then add egg yolk and mix until evenly combined.

Add the Chinese pearl barley powder from Step 1 to the mixture, stir with a rubber spatula until a dough forms.

Divide the chilled dough from Step 3 into two equal halves, wrap each half tightly in appropriately sized plastic wrap, and roll out with a rolling pin into a 7.5cm x 18cm rectangular sheet.

Remove the plastic wrap from the rolled dough in Step 4, dust with dusting flour, then trim both ends to create neat edges.
