Raw Beef and Ho Fun
A Zhejiang-style soup featuring a clear broth simmered from beef bones and brisket, served with rice noodles, raw beef slices, and enoki mushrooms that are quickly cooked in the hot broth. Delicately savory with a tender, silky texture.

Step 1
Bring a pot of water to a boil. Crack the beef bones, then blanch them together with the beef brisket in hot water. Remove, rinse separately and set aside.
Step 2
Crack the tsaoko, place it together with star anise into a small cloth bag and set aside. Peel the radish, cut it into chunks and set aside.
Step 3
Prepare a pot of water, add the cloth bag, beef brisket and beef bones. Bring to a boil over high heat, skim off the foam, then reduce to low heat. Add 1/3 onion, ginger, radish chunks and salt, and simmer for 1 hour. Remove the beef brisket, then continue cooking for 3 hours. Finally, strain all ingredients from the broth, leaving only clear soup. Add sugar and fish sauce to taste.
Step 4
Slice the cooled beef brisket and set aside. Blanch the ho fun, bok choy and enoki mushrooms separately. Take a soup bowl, add the ho fun, then top with beef brisket slices, bok choy, tender beef slices, shredded onion and enoki mushrooms. Pour in the prepared broth, and finish by sprinkling with minced scallion.
