Cut the pork belly into large chunks

Slice the ginger and garlic; rinse the star anise, cinnamon bark, and bay leaves clean

Do not add oil to the wok; place the pork belly in and stir-fry

Stir-fry until the fat renders from the pork belly and it turns slightly golden brown

Add the ginger, garlic, star anise, and cinnamon bark; stir-fry until fragrant

Add light soy sauce, dark soy sauce, cooking wine, and oyster sauce; stir-fry to color

Add hot water, enough to submerge the meat

Add the bay leaves and rock sugar

Transfer to a clay pot; bring to a boil over high heat, then simmer over low heat for about 1 hour
