Step 1
Cut the pork belly into large chunks.

Slice the ginger and garlic cloves; rinse the star anise, cinnamon stick, and bay leaves.

Add no oil to the wok; place the pork belly into the wok and sear it.

Sear until the pork belly releases its fat and turns lightly golden brown.

Add the ginger, garlic cloves, star anise, and cinnamon stick; stir-fry until fragrant.

Add light soy sauce, dark soy sauce, cooking wine, and oyster sauce; stir-fry to coat.

Pour in hot water enough to cover the meat.

Add the bay leaves and rock sugar.

Transfer to a clay pot; bring to a boil over high heat, then simmer over low heat for about 1 hour.
