Red Date, Lotus Seed and White Fungus Soup
A traditional seasonal eating guideline states: “Eat green in spring, red in summer, white in autumn, and black in winter.” The “white for autumn” recommendation refers to adding more white-colored foods to your fall diet, such as white fungus, lotus seeds, lotus root, yam, and sweet potato.

Prepare all ingredients.

Wash the white fungus with water and soak it head-down for five minutes.

Remove the tough base of the white fungus.

Instead of tearing it by hand, I cut it with a knife into smaller pieces so that it absorbs flavor better and releases its gelatin more easily.

Add the white fungus and lotus seeds into the pot at the same time, add half a pot of water, and cook for 40 minutes.

Then add the red dates and cook for another 15 minutes.

Then add rock sugar and goji berries and cook for five minutes.

After about an hour, the white fungus soup is ready to be enjoyed.
