Quick Weeknight Home Cooking Series: Cabbage and Vermicelli

Ingredients

vermicelli noodles
cabbage
shredded pork
eggs

Instructions

1

Step 1

Ingredients: vermicelli noodles, cabbage (also called round cabbage or pointed cabbage), shredded pork, eggs

2

Step 2

First, prep the ingredients. Toss the shredded pork with cooking wine, white pepper, salt, and cornstarch and let it marinate. Then heat a pan and stir-fry the pork briefly.

3

Step 3

Once the pork has fully changed color, remove it from the pan and set aside.

4

Step 4

Soak the vermicelli in warm water until soft, then drain and toss with dark soy sauce and sesame oil to add color and flavor.

5

Step 5

Wash the cabbage and cut it into thin strips. Beat the eggs. Mince a little garlic. Stem one Thai chili and slice it into rings. Cut the scallions into segments.

6

Step 6

Heat oil in a hot pan and pour in the beaten eggs.

7

Step 7

Once the eggs have set, remove them from the pan and set aside.

8

Step 8

Add a little more oil to the pan and stir-fry the minced garlic and chili rings.

9

Step 9

Once fragrant, add the cabbage strips and stir-fry.

10

Step 10

When the cabbage strips have softened, add the pork and stir-fry together.

11

Step 11

Add the vermicelli and continue to stir-fry. At this point, season with salt, sugar, and a small amount of light soy sauce. Stir frequently so the cabbage releases its moisture and the vermicelli absorbs the liquid and flavors in the pan.

12

Step 12

Finally, add the cooked eggs and scallion segments, toss everything together until evenly combined, and serve.

13

Step 13

When eating this dish, try to pick up a bit of every ingredient together — the different flavors and textures combine into something especially satisfying with rice.
